Quick Vanilla Buttercream
3 cups powdered sugar
1 cup butter
1 teaspoon vanilla extract
1 to 2 tablespoons whipping cream or whole milk
In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream/milk if needed for spreading consistency.

Does the icing harden up or does it stay creamy? I’m looking for an icing recipe for sugar cookies that will harden up so they can be stackable.

Great question Michelle! The frosting will harden. You might want to add a little more powdered sugar or a little less milk, just so the frosting has a little more thickness to it. Thanks for visiting Double Batch!
